Affecting Factors There are several factors which affect the efficiency of enzymes. These are temperature, pH values and concentration of the enzyme and substrate. pH Value There is an optimum pH value for all enzymes where the rate of reaction is at it's quickest. If the pH value moves too far either way the enzyme will become denatured. Most enzymes optimum pH value is between pH 5 and 9 however most catalyse most efficiently pH 7. Arogant of denaturing the enzyme, a change in pH alters the ionisation of the amino acid side chains at the aqctive site. Concentration of enzyme and substrate As the concentrations of enzyme and substrate increase as does the chance of particle collision between the two.
